Preheat oven to 350 degrees.
Spread the sesame seeds onto a small tray and bake for 10-15 minutes until they turn a light brown. Remove from oven and set aside to cool.
Combine all the ingredients, including the sesame seeds, in a large bowl.
Generously spray two large baking sheets with coconut oil. Evenly divide the cracker dough between both sheets and spread them out to about 1/16" thickness.
With a pizza cutter, cut the dough into 2" squares.
Bake for 12-15 minutes until a light brown. Let cool fully on baking sheets before breaking apart and storing.
