Delicious, crunchy, chocolatey, and...healthy. Booyah! Crunchin' Chocolate Fudge Bars are from The Sweeter Side of Candida cookbook. Sugar and gluten-free!
- 2/3 cups cocoa butter
- 2/3 cups cacao powder
- 3 tablespoons xylitol granules
- 1 cup almond butter (you can replace this with an allowed nut butter of choice; but be aware it may change the flavor.)
- 1 cup gluten-free oatmeal
- 1/2 cup unsweetened coconut flakes
- 1/2 cup almonds, chopped (use code 'JT' to get 10% off)
- 1 teaspoon vanilla extract
- 1 pinch Himalayan salt (omit if nut butter is salted)
- stevia (to taste)

Grease a 9x9 pan with coconut oil.

Melt cocoa butter in a medium saucepan over low/medium heat. Add cacao powder and xylitol and stir until xylitol is dissolved. Stir in almond butter, oats, coconut flakes, almonds, and vanilla extract. Add stevia to taste - a little at a time until just a tad too sweet.

Pour batter into the 9x9 pan and refrigerate about 2 hours or until hard. Store in the refrigerator.

Hi! I’m sure I found your blog through Pinterest. Ive had it bookmarked for days now and keep planning to make these bars. They look and sound so delicious. However, though I’ve looked at the recipe numerous times and almost have it memorized, it’s just finally dawning on me that coconut oil is not an ingredient – cocoa butter is. Where do I find that? The only time I’ve ever used cocoa butter is when I make lip balm – and I bought that at a hobby store – doubt the stuff would be food-grade.

I found mine on Amazon.com. I bought “Raw Organic Cocoa Butter by SAAQIN”.
Agh! I’ll have to wait a little longer to make these as I just ordered something from amazon the other day and would rather have a larger order. I wish the ingredient list had registered a bit sooner! Thanks for replying so quickly 🙂

Hi, You have saved me with the crunchy fudge bars on this candida diet. I made them six delicious times but now I can not find the cocoa butter at Wholefoods,lTrader Joe’s, Sprouts, Gleasons. Online they say it is for body lotion? I am so not a cook. Where can I order it and what exactly am I ordering? Thank you

HI there, could you substitute Coconut oil instead of cocoa butter?
Cacao butter is a fat like coconut oil, but unlike coconut oil, it also has a chocolate flavor. It also doesn’t melt at room temperature. Hmm. I don’t know that I would substitute it myself, but if you give it a go, let me know how it turns out! 🙂
