Avocado Lime Salad
Eating salad regularly is an excellent way to consume fresh vegetables, but it can be easy to fall into a salad rut and eat the same combination over and over again. This salad will help add some variety.
It’s light and fresh and would be perfect for lunch. It also serves well as a side dish.
Because this salad features avocado and olive oil you can rest assured that it provides some good healthy fats. These fats help you absorb all the other nutrients on your plate.

This light and fresh avocado lime salad is sure to brighten any meal!
- 1 head romaine lettuce
- 1 avocado sliced
- 1 mango sliced
- 1 small green pepper chopped
- 1 small red pepper chopped
- 3 green onions (or 1/3 red onion)
- 1 tablespoon fresh parsley finely chopped
- 1 tablespoon fresh chives finely chopped
- 1/3 cup olive oil
- ¼ cup fresh lime juice
- 2 tablespoons fresh lemon juice
- 2 tablespoons apple cider vinegar
- 2 cloves garlic minced
- 1 tablespoon dried tarragon
- 1 tablespoon fresh coriander finely chopped
- black pepper (to taste)

Wash and tear lettuce leaves and place into a large bowl.

Chop the peppers and green onions finely and sprinkle over the lettuce.

Add the fresh herbs and lightly toss to combine.

Peel and chop the mango and avocado. Scatter these over the salad.

Place all ingredients in a glass jar and tightly close the lid. Shake the jar vigorously to combine.

Pour 1/3 of the dressing over the salad just before serving. Lightly toss the salad to distribute the dressing. Add more dressing if needed.
Fresh herbs are about 3 times more potent than dried, so if you need to use dried herbs, you'll only need about 1/3 of the amount. For example, if a recipe calls for 1 tablespoon of fresh parsley, you'll need 1 teaspoon of dried (3 teaspoons equal 1 tablespoon).
