I love muffins, don’t you? Muffins are an easy and versitile snack. They work well for a busy morning on the run, an afternoon treat, or a yummy side served with supper.

Yesterday we were out cleaning the grove and the kids appreciated snacking on muffins during our break. I appreciated the fact they were Sourdough Blueberry & Red Maca Muffins.

Why? Because these aren’t your ordinary muffins.

Lately I’ve been reading about maca’s benefits in mental clarity, focusing, and stress-reduction.

I don’t know about you, but our calendar gets full pretty fast. . .school, yard work, weekends away, planting season. . .it can make for long days and late nights – which of course can do a number on you stress-wise. It doesn’t help if you need to be on top of your game at work or alert when working around machinery.

The same goes for the kids. Schoolwork has deadlines, tests loom in the distance, and we all know how hard it can be to focus on a reading assignment. . .anything that helps the kids keep their focus is an added plus!

Sourdough Blueberry & Red Maca Muffins

Try these hearty maca muffins and reap the benefits of sourdough and red maca all in one delicious morsel!

Ingredients

  • 1 cup sourdough starter
  • 1 1/2 cup homemade yogurt
  • 1/4 cup coconut oil (melted)
  • 2 eggs
  • 1 1/2 cup whole wheat flour
  • 1 cup oatmeal (old-fashioned)
  • 1/2 cup rapadura
  • 3 teaspoons ground cinnamon
  • 3 teaspoons nutmeg
  • 2 tablespoons red maca (can use other varieties/colors)
  • 3 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoon almond extract
  • 1 teaspoon celtic sea salt
  • 1 teaspoon baking soda
  • 1 1/2 cup frozen blueberries
  • stevia to taste

Directions

1. Combine sourdough starter, yogurt, coconut oil, and eggs in a large mixing bowl.
2. Add whole wheat flour, oatmeal, rapadura, ground cinnamon, nutmeg, red maca, vanilla and almond extracts, and salt and mix well.
3. Cover the bowl and let sit in the fridge for 24 hours.
4. When you're ready to bake, take the muffin dough out of the fridge and let come to room temperature. Preheat the oven to 375 degrees and spray muffin pans with coconut oil.
5. Mix in the baking soda, frozen blueberries, and stevia.
6. Fill each muffin cup 3/4 full. Bake for 30-35 minutes.
7. Let cool for about five minutes, then remove carefully from muffin pan and let cool on a cooling rack.
