Cracker memories

Do you love the crunch of salty crackers? When you became gluten-free or started a candida diet, did you think they’d become a memory?

When I was younger I loved the cheese and crackers that came in little plastic containers. A little square filled with processed cheese, four crackers, and a stubby red stick made me a happy camper.

In the early years of married life, and before Travis found out he was gluten-free, our favorite Saturday pastime was lazing around in bed all day eating Triscuits from the box and cuddling for hours. We had no place to go, nothing to do, and our kids hadn’t been invented yet. Even now one of us will point to a box of Triscuits in the grocery store aisle and we’ll both get goofy grins on our faces.

Ahh, the memories a little square of flour can evoke.

But now we’re middle-aged adults (gulp), with five kids, full-time jobs (yes, being an at-home-mom is a full-time job and I will stand by that statement until the day. I. die.), and no gluten-filled crackers to whisk us back in time.

So we make our own crunchy and delicious crackers, smile at each other while we nibble them in passing, and share them with the kids who have them gone in about 10.5 seconds and counting. But hey, at least they’ve learned to clean up their crumbs. Life is still good. 🙂

Red maca gives a needed health boost

And because we all need a superfood to boost to our energy and immune system, because we can benefit from an increase in essential minerals like potassium, calcium, magnesium, and iron, and because I’m guessing most of us have times we’d like more mental clarity and focus to get us through a work day – we add one of my favorite ingredients: red maca.

Sesame & Red Maca Crackers

Allergies Candida-Diet, Gluten-Free
Meal type Snacks
From book adapted from The Gluten-Free Almond Flour Cookbook
Crunchy sesame crackers with just a hint of nutmeg. Our hidden ingredient makes them a powerhouse of nutrition.

Ingredients

  • 3 cups almond flour
  • 2 eggs
  • 1 cup sesame seeds (toasted)
  • 2 tablespoons coconut oil
  • 3 teaspoons red maca powder
  • 2 teaspoons celtic sea salt
  • 1 teaspoon nutmeg

Directions

1. Preheat oven to 350 degrees.
2. Spread the sesame seeds onto a small tray and bake for 10-15 minutes until they're just turning a light brown. Remove from oven and set aside to cool.
3. Combine the ingredients, including the sesame seeds, in a large bowl.
4. Generously spray two large baking sheets with coconut oil. Evenly divide the cracker dough between both sheets and spread them out to about 1/16" thickness.
5. With a pizza cutter, cut the dough into 2" squares.
6. Bake for 12-15 minutes, until a light brown. Let cool fully on baking sheets before breaking apart and storing.
