So what’s the deal with sourdough bread? In our quest to eat healthier, this topic came up a lot. I finally sat down one day to read about it.

Sourdough bread is made by ‘souring’ the flour and using natural yeast to make baked goods rather than commercial yeast. The acids produced by beneficial lactobacillus bacteria in a sourdough starter give the bread its sour flavor.

Okay, so that was sourdough basics, but what excited me more were the health benefits.

More than just bread:

  • The bacteria and long soaking/rising times of sourdough help activate phytase, an enzyme that breaks down phytates and phytic acid.
  • Sourdough bread can help lower insulin response and ensure that blood gluclose levels are stable. The lower the number on the glydemic index (the measure of how high and how quickly blood sugar spikes after eating a food), the less it affects blood sugar and insulin levels. Sourdough bread rates a 68 as opposed to 100 by other breads.
  • During the long soaking/rising time, the bacteria eat the starch and sugars in the grain. This makes sourdough bread easier to digest, as well as allowable on a candida diet.
  • The long soaking/rising time breaks down gluten. Many people with gluten sensitivities, report they can eat sourdough breads.
  • Sourdough is a fermented food, similar to kefir and sauerkraut. Fermented foods promote the growth of friendly intestinal bacteria – again, making sourdough bread enjoyable on a candida diet.

Sourdough on a gluten-free or candida diet?

I dove into sourdough bread-making and was thrilled to discover that Travis, my gluten-free husband, can eat it with no side effects. My sister-in-law, who has not been ‘technically’ tested for celiacs but reacts to gluten as a celiac, has also eaten a pure, long-soured sourdough bread and had absolutely no reaction.

For the past several years, both Travis and I have followed Stage 3 (maintenance mode) of the candida diet (outlined in Dr. Bakker’s book, Candida Crusher), and have enjoyed the wonders of sourdough bread.

Our favorite recipes include Sourdough Pizza Crust, Easy Sourdough Pancakes, and delicious, butter-dripping Sourdough Bread.

Sourdough bread is great! Sourdough bread is better! But sadly, sourdough bread is becoming a forgotten art. Learn how to start and care for your own sourdough, and I guarantee your toes will be thrilled too!
